Global knives are my personal brand of choice at the moment. The global knives are recognisable by there pitted metal handles. Over all the global knife is great. Global knives are one of the cheaper brands that are at Pro Chef quality, the metal is soft enough that sharpening is easy yet strong enough to hold a sharp edge. They are softer than some of the older German made knives, and slightly more brittle I find. What this means is if you drop, expect the points to break off, kitchen knife but for sharpening you can get these knives like razor blades. I just clean mine in the dishwasher and they are still fine after 5 years of heavy use. If you use a diamond dust sharpening stone you can get a good edge on the global knife in seconds and it will hold it for hundreds of uses. They are made in Japan but are not only for Japanese cooking coming in all shapes and types, I even have their cheese knife. Global knives are light, well balanced and easy to sharpen! |
